Cultivar Carolea e Coratina
At the beginning of the olive oil campaign, in the month of November, the olives reach a bright green colour.
In December, however, it is the period in which the maturation is being completed and the olives take on the typical colour that varies between green and violet.
During these two months the olive oil that is produced maintains very precise aromas and taste characteristics, attractive and never too invasive, leaving the main flavours of the food unaltered.
Therefore, it is an oil that goes well with almost all dishes ranging from pasta to grilled meat, from legumes to fish, and salad to pinzimonio.

The grounds of Campolongo were acquired by the Princes Ruffo in 1690. A nephew, the Duke of Bagnara, ordered the planting of a vast olive grove in 1728. Today a direct descendant, Count Gherardo Terzi, is the owner of this estate.
